A practical way to turn safely chilled cooked rice and frozen vegetables into dinner.

Fried rice works best when the grains are cooked, cooled promptly, and refrigerated before they reach the pan. Freshly cooked rice is wetter and tends to clump. This version uses eggs and frozen vegetables, making it useful when the fresh-food drawer is looking thin.
Have everything measured before heating the pan. Once you start, the cooking moves quickly. A broad frying pan is fine; you do not need a wok, but you do need space for the rice to spread out.

Break up the rice
Use a fork to separate the chilled rice grains. Put soy sauce and sesame oil within reach. Keep the white and green spring-onion parts separate.
Scramble the eggs
Heat half the neutral oil in a large pan over medium-high heat. Add eggs and stir until set. Transfer to a clean plate.
Cook the vegetables
Add the remaining oil, onion whites, and garlic. Stir for 30 seconds, then add frozen vegetables. Cook for 3–4 minutes until hot and any released water has evaporated.
Fry and finish
Add rice and spread it out. Stir-fry for 3–4 minutes until thoroughly hot. Add soy sauce, cooked eggs, onion greens, and sesame oil. Toss well and serve immediately.

Rice safety matters
Use rice that was refrigerated promptly, not rice left at room temperature overnight. Reheating cannot reliably fix food that was stored unsafely.
Avoid crowding
If the pan is small, cook two batches. Overfilled pans steam the rice instead of frying it.
Taste the sauce last
Soy sauce varies in saltiness. Start with the stated amount and add a little more only after tasting.
