This is the kind of meal that makes canned beans earn their shelf space. Mash a few into the broth and the sauce becomes creamy without needing much cream. The rest stay whole, giving the dish some texture.

Canned bean and chickpea amounts refer to the can label weight before draining.

Method

  1. Cook the aromatics

    Heat oil in a wide pan over medium heat. Add onion and cook for 5 minutes until soft. Add garlic and thyme; cook for another minute without browning the garlic.

  2. Thicken with beans

    Add beans and stock. Bring to a gentle simmer. Mash about a quarter of the beans against the side of the pan with a spoon, then stir them back in. Simmer for 5 minutes.

  3. Wilt the spinach

    Add spinach in two batches, stirring as it softens. Pour in cream and simmer gently for 2–3 minutes. Avoid a hard boil once the cream is added.

  4. Balance and serve

    Stir in lemon juice and pepper. Taste before adding salt, especially if your stock is salty. Add a splash of water if you prefer a looser sauce. Serve hot.
