Smoky Black Bean and Sweet Potato Bowls

Sweet potatoes and black beans make a satisfying bowl without an expensive shopping list. The potatoes roast while the beans warm on the stove, and a squeeze of lime brings the two together.

This recipe deliberately leaves the toppings simple. A little yogurt and shredded cabbage give creaminess and crunch. If you have avocado or fresh coriander, add them; the bowl still works well without either.

Ingredients

Canned bean and chickpea amounts refer to the can label weight before draining.

Method

  1. Roast the potatoes

    Heat oven to 220°C / 425°F. Toss sweet potato with oil, paprika, and half the salt. Spread on a roomy tray and roast for 25–30 minutes, turning once, until tender and browned at the edges.

  2. Warm the beans

    Put beans, cumin, water, and remaining salt in a saucepan. Simmer gently for 8–10 minutes, stirring occasionally. Mash a spoonful of beans to thicken the liquid if you like.

  3. Make the dressing

    Mix yogurt with half the lime juice and a spoonful of water to make a drizzle. Taste and adjust the sharpness.

  4. Build the bowls

    Divide beans and potatoes between four bowls. Add cabbage, yogurt dressing, and the remaining lime juice. Serve while the beans and potatoes are warm.

Small details that help

Do not pile the tray

Spread the cubes out so moisture can escape. Use two trays if needed.

Watch the bean pot

Add a splash of water if the beans thicken before the potatoes finish.

Separate leftovers

Store cabbage and dressing separately from warm components so the next bowl keeps its crunch.

Do I have to peel the potatoes?

No. Scrub them well and keep the skin if you prefer.

Can I make these less smoky?

Replace smoked paprika with sweet paprika or leave it out and use a little extra cumin.
