Breakfast potatoes do not need a large oven tray. Cut them small, give them a brief steam in a covered skillet, and finish uncovered so the edges can brown. The vegetables add sweetness without a complicated seasoning mix.

This is a side-style breakfast base. Add fully cooked eggs, beans, or yogurt alongside if you want a more substantial meal. Keep the potato pieces similar in size so you do not end up with burnt edges and firm centers.

  1. Start the potatoes

    Heat oil in a lidded skillet over medium heat. Add potatoes and salt, stir, then add water carefully. Cover and cook for 7–8 minutes, stirring once.

  2. Check tenderness

    Pierce a cube with a fork. It should be nearly tender. If firm, add another tablespoon of water and cover for 2 minutes.

  3. Brown with vegetables

    Remove lid. Add onion and pepper and cook for 8–10 minutes, stirring occasionally, until moisture has evaporated and the potato edges are golden.

  4. Season to finish

    Sprinkle over paprika and pepper. Stir for 30 seconds, then taste and serve hot with your chosen accompaniment.

Cut genuinely small cubes

Large chunks take longer than this skillet method allows.

Wait between stirs

Leaving the potatoes in contact with the pan for short stretches helps them brown.

Add spices near the end

Paprika can scorch during a long fry; adding it late keeps the flavor clean.

Use cooked potatoes

Skip the covered steaming stage and start browning them directly, then add vegetables.

Different pepper

Any color of bell pepper works. Green is less sweet than red.
