Small-Batch Banana Oat Pancakes

A ripe banana does most of the sweetening in these soft pancakes. Oats give them a more substantial texture than a flour-only batter, and making the pancakes small helps them cook through before the outside becomes too dark.

The batter needs a short rest. Ground oats absorb liquid slowly, so a mixture that looks thin immediately after blending may be right after five minutes. These are tender pancakes, not tall diner-style stacks.

  1. Blend the batter

    Blend banana, oats, egg, milk, baking powder, and cinnamon until mostly smooth. Let the batter rest for 5 minutes.

  2. Check the texture

    It should pour slowly from a spoon. If it is very thick, stir in a tablespoon of milk. If watery, leave it another minute before changing it.

  3. Cook small pancakes

    Heat a nonstick pan over medium-low heat and brush with oil. Add about 2 tablespoons batter per pancake, leaving room between them. Cook for 2–3 minutes until edges look set and small bubbles appear.

  4. Turn once

    Slide a thin spatula fully underneath and flip gently. Cook another 1–2 minutes until the center is cooked through. Repeat with the rest and serve warm.

Keep the heat modest

Banana browns quickly. Reduce the heat if the first side darkens before it sets.

Turn patiently

Flipping too early is the main reason these pancakes tear. Wait until the edges hold their shape.

Serve without excess sugar

Sliced fruit or plain yogurt often supplies enough contrast. Syrup is optional.

Substitutions & ways to make it yours

No blender

Use oat flour and mash the banana very thoroughly. The batter will be slightly less smooth.

Milk choice

Dairy milk or an unsweetened plant milk both work.

Gluten-free needs

Use oats specifically labeled gluten-free and check the baking powder label.

A couple of useful questions

Can I double the batch?

Yes. Blend in batches if your blender is small, and keep the same pancake size.

Can I freeze them?

Cool promptly, freeze separated on a tray, then bag. Reheat until hot throughout; the texture will be softer than freshly cooked.
