An omelet is a small meal that rewards a little preparation. Cook the filling first, keep it nearby, then make the eggs in the same pan. Trying to soften raw mushrooms inside a folded omelet leaves too much moisture behind.

A small nonstick pan makes this two-egg portion easier to fold. You do not need to make a perfect half-moon; the goal is cooked eggs, a warm filling, and a meal that reaches the plate without sticking.

  1. Cook the filling

    Heat half the butter or oil in a small nonstick pan over medium heat. Cook mushrooms for 4–5 minutes until their water evaporates. Move to a plate.

  2. Prepare the eggs

    Beat eggs with water, salt, and pepper until yolks and whites are combined. Wipe any loose mushroom bits from the pan.

  3. Set the omelet

    Add remaining fat and pour in eggs over medium-low heat. Tilt the pan to spread them. Use a spatula to lift the edges briefly, allowing uncooked egg to flow underneath.

  4. Fill and fold

    When eggs are almost set, place mushrooms and cheese on one half. Fold the other half over. Continue cooking gently until the egg is fully set and the cheese melts, then slide onto a plate.

Small pan, easier fold

An oversized pan spreads the eggs too thin and makes them fragile.

Finish the eggs safely

Do not leave liquid egg trapped in the center. Reduce heat and allow another minute if needed.

Pre-grate cheese

Having the filling ready prevents the omelet from overcooking while you search for a grater.

Substitutions & ways to make it yours

No mushrooms

Use a spoonful of cooked vegetables, drained of excess liquid.

Cheese-free

Omit cheese and add chopped herbs.

Larger appetite

Add toast or a side of cooked potatoes rather than overloading the omelet.

A couple of useful questions

Should I add milk?

Water is enough here. Milk is optional, but too much liquid can make the omelet delicate and harder to fold.

The pan coating, heat, and amount of fat all matter. Use a good nonstick pan and moderate heat.
