White beans mash into a creamy sandwich filling with very little effort. Mustard and lemon give them enough sharpness to stand up to bread, while grated carrot adds a gentle crunch.

This filling is an alternative to mayonnaise-based sandwich salads, not a copy of one. Keep a few beans partly whole for texture, and use a sturdy bread that will not collapse under the filling.

Method

  1. Mash the beans

    Put drained beans in a bowl. Mash with a fork until creamy but still slightly chunky.

  2. Season the filling

    Stir in oil, lemon, mustard, carrot, salt, and pepper. Taste and adjust the lemon before adding extra salt.

  3. Prepare the bread

    Toast bread lightly if you prefer a firmer sandwich. Dry lettuce well so it does not add unnecessary moisture.

  4. Assemble

    Divide the filling between two slices of bread. Add lettuce and top with remaining slices. Cut and serve, or wrap and keep chilled for lunch.

Small details that help

Avoid a puree

A fork leaves useful texture. A blender can make the filling overly smooth and sticky.

Keep wet toppings modest

Thin tomato slices are fine, but several thick slices can make packed sandwiches soggy.

Taste the filling alone

Bread softens strong flavors, so the filling can be a little sharper than you would serve in a bowl.
